Gazpacho Andaluz

INGREDIENTS

1.5 kg tomatoes
250 grams green peppers
250 grams cucumber
1 garlic clove
Oil (2 tablespoonfuls)
Vinegar (1 tablespoonful)
100 grams bread

PREPARATION GAZPACHO ANDALUZ

Soak the bread in a bowl. Cut the tomatoes, cucumber and peppers into small pieces. Grind them with a blender and use a strainer to filter out pieces of tomato skin and seeds, and pour the puree into a container. Grind the soaked bread and garlic with a blender, add vinegar, oil, salt and some water. Mix with the puree of tomato, cucumber and peppers. If you want, add some more water.

Gazpacho andaluz is usually served with pieces of bread, tomato, cucumber and peppers (sometimes onion) in a separate bowl so you can help yourself to however much you prefer. Gazpacho is best served cold.
